SALMON WITH HERB SAUCE
Serves 4
1-1/4 pounds fresh salmon fillets
1 cup dried bread crumbs
1 Tbs. parsley flakes
1 Tbs. basil leaves
1/4 tsp. garlic powder
1/4 cup unsalted butter
1 Tbs. fresh lime juice
1 Tbs. grated lime peel
1 tsp.
Preheat oven to 400 degrees. Rinse fillets and season with salt
and pepper. Place in refrigerator until ready to use.
In a small bowl, combine bread crumbs, parsley, basil and garlic.
In a saucepan, melt butter over medium heat. Add lime juice, lime peel, Old Bay
Seasoning and bread crumb mixture. Sauté mixture until
crunchy, 6 to 8 minutes.
Grease a large baking pan. Remove fillets from the refrigerator,
coat them with the bread crumb mixture and place them in the pan in a single
layer. Do not overlap fillets.
Place pan in preheated oven and bake for 10 minutes or until fish
is done. Always check for doneness 2 or 3 minutes before the fish is due to
come out of the oven.
